Three Generations, One Pot of Gumbo

By Barry Thibodeaux Burrows

Three Generations, One Pot of Gumbo

A gumbo is only as good as the roux, and a roux is only as good as the patience behind it.

My grandmother stirred hers until it was the color of old pennies, never once walking away from the pot. My mother did the same. I burned my first one at twelve years old and learned why they never did.

The holy trinity

Onions, celery, green bell pepper — chopped fine, sweated slow, never rushed. That trinity meets the roux and the whole kitchen starts to smell like home.

What we serve

Our chicken and andouille gumbo simmers for hours, then lands over local jasmine rice with a scoop of potato salad on the side. It's the bowl that taught me how to cook, and it's the first thing you'll taste when you sit down at Thibodeaux's.
